Cherie’s Fudgy Brownies
1/4 tsp Baking soda
1 1/4 cups Flour, all purpose, unbleached
1/4 cup Buttermilk
1 ½ cups Sugar, white, granulated
1/3 cup Butter
1/4 cup Cocoa powder
2 Eggs, large
2 tsp Vanilla, pure extract
Preheat oven to 350 Grease a 9" x 13" baking pan.
Whisk together the baking soda and the flour in a small bowl, and set aside to use later.
Heat the buttermilk, the sugar, and the butter together, in a saucepan, stirring constantly over medium heat, just until the mixture comes to a boil.
Remove the mixture from the heat. Add in the cocoa powder. Stir slowly until the mixture is smooth. Cool for at least 10 minutes.
One at a time, to the sugar/cocoa mixture; add the eggs, stirring very well after each egg. Add the vanilla extract, and stir. Now add the set aside flour mixture and stir until the brownie batter is well mixed.
Pour the brownie batter into the prepared pan. Bake until done,(when a pick comes out clean when tested about 2" from the side) for about 18 to 20 minutes. Cool in the pan on a wire rack.
Dora’s Doubly Chocolate Brownies
1 cup Chocolate chips (your choice)
4 ounces Chocolate squares, unsweetened
1 cup Butter, salted
2 tsp Vanilla, pure extract
4 Eggs, large
2 cups Sugar, white, granulated
½ tsp Salt
1 tsp Baking powder
1 cup Flour, all purpose
1 cup Pecans, chopped
2 cups Marshmallows, miniature
Preheat oven to 350 Butter a 9" x 13" baking pan
In a medium size pan on top of the stove, stirring continually, melt together the chocolate chips, the chocolate squares, and the butter, until smooth. Remove the pan from the stove and cool.
In a large mixing bowl, with an electric mixer, beat together vanilla, eggs, and sugar, until well blended. Beat in the cooled chocolate mixture.
In another small bowl, mix together the salt, baking powder and flour. Stir these dry ingredients into the chocolate batter.
Add the chopped pecans and the miniature marshmallows, and stir until well mixed. Pour into the prepared baking pan.
Bake for about 40 to 45 minutes, check them often. Be careful to not overcook. The brownies will firm up when they cool. This recipe will make about 30 brownie squares.
Marbled Brownies
3 Tbl Butter, sweet, salted
4 oz Chocolate, sweet, baking
3 oz Cream cheese, softened
2 Tbl Butter, sweet, unsalted, softened
1/4 cup Sugar, white, granulated
1 Egg, large
1 Tbl Flour, white, all purpose
½ tsp Vanilla, pure extract
2 Eggs, large
3/4 cup Sugar, white, granulated
1/4 tsp Salt
½ tsp Baking powder
½ cup Flour, white, all purpose
1 tsp Vanilla, pure extract
1/4 tsp Almond extract
½ cup Walnuts, chopped
Preheat oven 350 Grease an 8 inch square baking pan
In the top of a double boiler, with the heat on high, combine 3 tablespoons of butter, the baking chocolate; and bring the water to a boil. Reduce the cooking heat to low. Heat and stir the mixture until the chocolate melts. Remove from the heat and set aside to cool.
In a bowl, with electric mixer, cream together the cream cheese, 2 Tbl butter and, 1/4 cup sugar; until the mixture is light and fluffy. Stir in 1 egg, 1 Tbl flour, and ½ tsp vanilla extract and combine well. Set to one side.
In a large bowl, with an electric mixer, at medium speed, beat 2 eggs until thick and lemon colored. Slowly add in 3/4 cup of sugar, and beat until well mixed. In a separate bowl mix salt, baking powder, and ½ cup flour. Add flour mixture to the egg and sugar mixture, combine together well. Stir in cooled chocolate, the vanilla and almond extracts, and walnuts. Mix until throughly combined.
Place half of chocolate batter in the prepared pan. Top with cheese mixture; put on the remaining chocolate batter. With a knife, cut through the mixture to create a marbled effect.
Place in preheated oven and bake for 35 to 40 minutes. Remove from oven, place on a wire rack to cool. When brownies are cool, cut into squares.
Biscuit Mix Chocolate Brownies
2 cup Chocolate chips, semi sweet
1/4 cup Butter
2 cups Biscuit baking mix
1 Egg, large, beaten
1 tsp Vanilla, pure extract
1 can Sweetened condensed milk
Preheat oven to 350 Grease 13" x 9" baking pan
In large saucepan, over low heat, melt 1 cup of the chocolate chips with butter. When the chocolate and butter are melted and mixed together, remove the pan from the heat.
To the saucepan, add the biscuit mix, the beaten egg, the vanilla extract and the sweetened condensed milk. Combine until all is mixed well. Stir in the rest of the chocolate chips. Turn this mixture into the prepared baking pan.
Place pan into the preheated oven and bake for 20 to 25 minutes. Or just until the brownies begin to pull away from sides of pan.
Remove pan from oven and cool on a wire rack. Cut into squares while still warm.
